Mexican Rice


Serves 4

2 cups minute rice
1 cup salsa
1 cup chicken broth
dash paprika

Combine chicken broth, salsa, and paprika. Bring to a boil. Add rice and turn off heat. Stir and cover for 5 minutes until all liquid is absorbed.

This can be made with salsa or a pureed tomato.
